French in Normandy is proud to offer an exciting range of courses for those wishing to put their language skills into practice in the world of work.

All these courses are offered in partnership with the very best specialist institutions in Normandy and in collaboration with Haute Normandie Internationale, the international section of the regional Chamber of Commerce.

The courses we offer in conjunction with the Institut National de la Boulangerie and Patîsserie (INBP) or the Institut Culinaire et Touristique de la Normandie (ICTN) constitute a two-stage path to a successful career in the hospitality and catering industries

France’s unique savoir-faire in the field of hospitality and culinary arts is a result of rigorous professional training based on sound principles and tried and tested traditions.

Rouen, at the heart of the historic region of Normandy, boasts culinary specialities known the whole world over, as well as centres of excellence in the field of training in cuisine, baking, pâtisserie and restaurant management.

The ICTN

 

The ICTN offers preparatory courses for all the recognised French examinations leading to qualifications in the hotel and catering industries as well as providing ongoing training for hotel and catering staff at the highest level. It also delivers courses in restaurant management and trains students wishing to develop their own businesses in the fields of hospitality and tourism.

The ICTN provides the very best in ongoing professional training in order to help preserve regional culinary traditions whilst encouraging creativity and innovation. Their special courses in practical advanced cookery and culinary techniques are at the heart of France’s continued reputation as a world leader in cuisine.

The programmes

The ICTN offers year-long academic vocational courses in cookery and restaurant management leading to the French state qualifications: the CAP (Certificate of Professional Aptitude) and the BEP (Diploma of Professional Studies).

In addition to these programmes, the ICTN proposes, in cooperation with ‘French in Normandy’, shorter introductory or preparatory courses. Full details are available on request.

 
Entry requirements for both institutes

  •   Minimum age: 18
  •   Successful completion of senior high school or 2 years’ relevant professional experience
  •   Successful completion of the French Language Foundation Programme to reach a minimum level of 2 on the Council of Europe’s scale of language levels.

  • The INBP

     

    The INBP was founded in 1974 by the the National Confederation of French Baking. It is a professional training organisation for industry professionals but its influence goes far beyond training, covering all facets of the baking and patîssserie industry.
    The INBP runs training programmes throughout the year for those already involved in the baking industry, from bakers and millers to teachers and retailers, as well as for those beginning their careers.

    INBP offers a five-month course leading to a French national qualification: either the CAP (Certificate of Professional Aptitude) – which is, for instance, a requirement if you want to open a boulangerie (baker’s shop) in France - or the BEP (Diploma of Professional Studies).

    The bakery (boulangerie) course includes sessions on flours and yeasts, traditional baguettes and other loaves, different European brioches, special breads, savoury or sweet tarts, viennoiseries and decorated loaves.

    The pâtisserie courses has sessions on cakes and gâteaux, working in sugar and in chocolate, pastries, meringues and creams, biscuits, confectionery, ices and tarts.

    In addition to these programmes, the INBP proposes, in cooperation with French in Normandy, shorter introductory or preparatory courses. Full details are available on request.
